Healthy No-Bake Energy Bites
Eating healthy can be tough, right? After you fill yourself with kale, zucchini, quinoa, and tons of water, don't you still feel a little empty? Sometimes you need a healthy, but TASTY (read: sweet), snack to keep you going throughout the day! These easy to make energy bites are chock full of all the flavors that you love, but still have those good-for-you nutrients in the base ingredients! They're perfect for that anytime snack and you can even have a few for an on-the-go breakfast!
Ingredients:
1. Old-fashioned oats (1 cup)
2. Natural creamy peanut butter (1/2 cup)
3. Honey (1/4 cup) or Stevia (2-3 packets)
4. Walnuts (1/2 cup)
5. Unsweetened shredded coconut (1/4 cup)
6. Hemp seeds (2 Tbsp)
7. Chia seeds (2 Tbsp)
8. Chocolate chips (1/4 cup or, you know, more... ;-))
Steps:
1. Mix everything in a large bowl!
2. Place in fridge for 30 mins so it becomes a little harder
3. Roll into small balls (appox 2 Tbsp-sized)
4. Slip into your purse, gym bag, or just enjoy right there!
