Clean Eating Mini Fruit Pizza

Hello Darlings! We've been a little busy for the last few months, but we're back! And we have a really fun (and quite delicious, if we do say so ourselves), easy, and quick recipe for you today.

These cute little fruit pizza/fruit tart cookie is perfect summer sweet! We added our fave fresh fruit: strawberries, raspberries, and kiwi.We whipped up a super quick and really tart and tasty lemon cream cheese frosting for this cookie! With reduced-fat dairy, added protein from the greek yogurt, and the clean sweetness of stevia, this is a great no-guilt topping to have on hand in your fridge to top any goody that you make.

Plus! It's a great crowd pleaser for your summer get-togethers!

Ingredients:

1) Sugar cookies (home made or store bought)

2) Fresh fruit ( We used strawberries, raspberries, and kiwis! But feel free to add your favorites!)

3) Lemon cream cheese frosting:

- Reduced Fat Cream Cheese (2 Tbsp)

- Non-fat Plain Greek Yogurt (1/4 cup)

-Reduced fat Cool Whip (1/4 cup)

-Vanilla extract (1/2 tsp)

-Lemon extract (1/2 tsp)

-Sweetner (we used 2 packets of stevia)

Steps:

1. Wash and cut your fruit!

2. Whisk together cream cheese and yogurt until all the lumps are out.

3. Mix in the cool whip, extracts, and stevia. Whisk until nice and smooth.

4. Place frosting in fridge for 15-20 minutes.

5. Put together your pizzas: spread a nice, thick layer of frosting and top with the fruits.
